These country potatoes are the best breakfast potatoes and are so easy to make at home! They're buttery and crisp, SO flavorful, and since they're completely cooked in the oven, your stovetop will be freed up for other breakfast fare.

Ingredients
2 1/2 to 3poundsred skin potatoes (about 6 medium potatoes),diced
1small yellow onion,chopped
1red bell pepper,chopped
2tablespoonsunsalted butter,chopped
2tablespoonsolive oil
2teaspoonskosher salt
1teaspoonpepper
1teaspoongarlic powder
1/4teaspoonpaprika
Pinch of cayenne
Directions
Preheat oven to 450 degrees.Toss all ingredients together on a large sheet pan and spread into a single layer. Bake 40-45 minutes, flipping twice. Sprinkle with more salt and pepper fresh from the oven and serve hot.
Notes
For crispier potatoes, increase oven temperature to 500 degrees for the last 10-15 minutes of cook time.You can double this using a 5 pound bag of potatoes. Be sure to split between 2 sheet pans.
