An easy and so satisfying rice salad with so much good curry flavor. It's easy to make ahead, delicious cold, at room temperature, or warm, and it goes with so many meals. It's kind of the perfect side dish, and one of my favorite things to take to potlucks!

Ingredients
1/3cupminced red onion
1/4cupapple cider vinegar
4teaspoonsdijon mustard
1tablespooncurry powder
1tablespoonhoney
1/2teaspoon kosher salt
1/2cupvegetable oil
4cupscooked rice(from 1 1/3 cup uncooked)
1/2cupchopped cilantro
1/2cupfrozen peas
2/3cup raisins
1/2cup sliced green onion
Directions
Combine the minced onion, vinegar, mustard, curry powder, honey, and salt in a small saucepan. Heat over medium until it begins to simmer. Remove from heat and whisk in the oil.To a large bowl, add the cooked rice, cilantro, peas, raisins, green onion, and dressing. Stir to combine. Refrigerate at least 1 hour before serving.Serve straight from the fridge, or warm.
