Cold Asian Noodles in Easy Peanut Sauce

These noodles! I cannot get enough of them.

They’re sort of an Asian-style pasta salad. And the sauce is just four ingredients that I am willing to bet you have in your pantry right now.

So simple to make. And so, so satisfying.

These make for a crowd-pleasing side dish on their own, or add shredded chicken for a main dish.

My favorite thing to do with these noodles is to pack them up in jars for easy, grab-and-go lunches.

Cold Asian Noodles in Peanut Sauce

A delicious and super simple make-ahead dish! Serve as a crowd-pleasing side dish, or add chicken for a more substantial meal.


  • 12 ounces dry spaghetti noodles
  • 2/3 cup reduced sodium soy sauce
  • 1/2 cup creamy peanut butter
  • 1/4 cup water
  • 2 tablespoons sugar
  • 1/2 teaspoon freshly ground black pepper 
  • 1 bell pepper, sliced thin
  • 1/2 cup chopped scallions

For serving: chopped peanuts; more scallions


  1. Cook noodles according to package directions and strain. Rinse with cold water. 
  2. Whisk together soy sauce, peanut butter, water, sugar, and black pepper in a large bowl until smooth. Add the bell pepper, scallions, and noodles. Toss to coat. Serve at room temperature or refrigerate.
